tasting the fruits of our labor...


We decided to be careful with carbonating this batch of soda and carbonate it twice, as the last soda we made (incredibly spicy ginger beer) while incredibly tasty and spicy enough to satisfy both our ginger-fiending palates, was not quite carbonated enough.

We carbonated it twice (once before going to bed, and once more in the morning) before trying it.

The results:
nice balance between the mild burn of the chille and the citrus flavor of the grapefruit - incredibly refreshing
perhaps still too foamy... and additional tasters are needed before we launch (we'll be actively recruiting tasters... any volunteers??)

grapefruit/ Thai chille/ honey soda



It was a freezing cold January evening - what better project to chase away the cold than to make a new batch of soda?
ingredients:
3 thai (birds eye) chilles
2 large grapefruits
3 tablespoons of honey

Chilles were deseeded and chopped, then boiled with a 50ml of water with the zest of the grapefruit. We heated this on low heat for 20 minutes, then added in the honey
Grapefruits were juiced, and the cooled and filtered mixture of chile, zest and honey was added to the 500ml of juice.
We left this in the fridge to cool for a few hours (while we caught up on another episode of The Prisoner - the original British one, not the new remake)

Before retiring for the night, we carbonated it in our soda siphon, and left it in the fridge over night.... ooh the suspense!
