Our first attempts at brewing our own ginger beer was interesting. Its quite easy to find recipes for brewing your own ginger beer using brewers yeast online.
We prefer our ginger beer much spicier than most of the commercially available ginger beer out there, (which is partly what drove us to start this project), so we added in a number of different spices and increased the amount of ginger by about 4 times.
We let ginger beer ferment for everything from 16 hours to 48 hours tasting along the way to determine the ideal alcohol concentration and residual sugar level. Then we did a test bottling by putting it in a plastic bottle and letting it sit at room temp until the bottle felt firm with CO2 and then putting it in the fridge.
Our friends and roommate were kind enough to be our guinea pigs!
